What impact will the PC 2.0 upgrade have on Xero / Quickbooks integration? 

No impact. Before we upgrade the site to PC 2.0, we will run a quick sync of records to Xero. This is because records linked to PC 1.0 will not sync with Xero after the site is upgraded to PC 2.0. After the upgrade, only PC 2.0 records will sync.
